Mimosas & Meal Prep: Chicken, Strawberry and Blue Cheese Salad

Does anyone else associate warmer weather with more colors? In clothes and food, when the weather gets warm, things get more vibrant. In honor of sunny and 60F days, this week’s meal prep salad was filled with spinach, fruits, chicken, almonds and a hint of summertime–whatever that tastes like. A blush vinaigrette perhaps?

This salad is perfect for people like me who aren’t kitchen pros but want something filling, refreshing and full of flavor. Seriously, this is the lazy girls’ ultimate chicken, strawberry and blue cheese salad. I recommend making it while sipping on mimosas. It makes meal prep much more fun!
 

 

Chicken, Strawberry and Blue Cheese Salad Ingredients

Spinach
Strawberries
Crumbled Blue Cheese
Quinoa
Avocado (Optional. I threw some on at the office and it was very tasty!)
Plus, the items below. It’s all going in one bowl.
 

Candied Walnuts Ingredients

Cinnamon
Sugar
Water
Almonds

Bring a 1/2 cup of water, 1 cup white sugar and 1 tablespoon of cinnamon to a boil in a pan. Add the almonds to the mixture and stir. Pour the almonds onto a baking sheet lined with waxed paper. Separate almonds using forks. Allow them to cool for about 15 minutes. You can also put them in the oven at 300F for a few minutes to help dry them out. (Whitney did.)
 

Chicken Breasts Ingredients

Salt
Pepper
Montreal Chicken Seasoning
Olive Oil
Chicken Breast

Marinate chicken breasts in a large Ziploc bag with all the seasonings and olive oil for about an hour. Bake them at 425F for 25-30 minutes.
 

Blush Vinaigrette Ingredients

2 Tablespoons of Red Wine Vinegar
1 Tablespoon of Agave Syrup
1 Tablespoon Fresh Lemon Juice
1 Teaspoon Table Salt
1/2 Teaspoon Garlic Powder
1/4 Teaspoon Freshly Ground Black Pepper
6 Tablespoons Olive Oil

Put in a blender. Blend and pour into a mason jar.

When you have all your ingredients, layer them in your tupperware for the week! But leave the dressing in a separate container (mason jars work well) so you can add it the day you’ll eat it. I just keep mine in the fridge at work.
